What’s Proteoglycan?

Present in the body along with collagen and hyaluronic acid, proteoglycan is characterized by moisturizing properties and flexibility. It’s gaining attention in the beauty and health fields as the “third functional component”.

wild salmon and local wisdom

Aomori Proteoglycan is made from salmon nasal cartilage. Only food-grade acetic acid and alcohol are used to extract it. The effects of proteoglycan had attracted notice in the past, but it was difficult to extract. Production costs of more than 30 million yen per gram made it a costly and rare component.
However, the technique of immersing salmon heads in vinegar to soften them for the traditional Aomori dish “Hizu Namasu” provided inspiration for a major leap in proteoglycan extraction R&D.
As a result, researchers succeeded in developing a method to easily and efficiently extract proteoglycan from salmon nasal cartilage, lessening production costs to an amazing less than one-thousandth.
In recent years, proteoglycan has found uses in food and cosmetics and become a familiar ingredient.
